I remember the days when my siblings and I were addicted to the game “Just Dance”… Oh great times!

Last Friday, I decided to “Just Dance” for old times’ sake (well, not really old but it kinda feels like it) and little did I know that I would be fully charged for days!

I mean, I do dance to latin music and I always feel charged but it was different this time.

I have been feeling like singing and dancing my heart out..!

If only there was a “Sing & Dance Your Heart Out” Club…!

but at least there is this song that says we don’t need to be together to get it started! ūüėČ

This Avocado Key Lime smoothie is beyond¬†PERFECTION!¬†Definitely One the best smoothies I have ever tasted….! I mean, the feeling I had when I had the first sip is just indescribable!

And one glass was sure not enough!

Healthy Single-Serving Chocolate Chip Oatmeal Cookie Cake

Alright, I really meant breakfast. I have been eating this for three days in a row now. I mean oatmeal and chocolate goodness is always perfect for breakfast, right?

Original recipe from The Baking Dietitian.

Ingredients:

  • 2 tablespoons rolled oats
  • 3 tablespoons whole wheat flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon stevia
  • 1/4 teaspoon vanilla flavoring
  • 3 teaspoons yogurt
  • 1 teaspoon coconut oil (or any oil of choice)
  • 2 tablespoons dark chocolate chips

Directions:

  • Preheat the oven to 180‚ĄÉ.
  • In a small bowl, combine dry ingredients and mix well. Mix in yogurt, oil and chocolate chips.
  • Transfer dough to a greased ovenproof bowl and bake for 10 minutes.

Enjoy!

Hot Chocolate Served Cold

What I love even more is having my hot chocolate cold and pouring over MORE coconut milk.

Ah, this chocolate-coconut goodness is always ideal to satisfy my chocolate cravings!

Ingredients: (enough for two large cups)

  • 100 grams dark chocolate bar (I use one with 72% cocoa and I don’t add¬†a¬†sweetener)
  • 1 1/2 cup milk of choice
  • 3/4 cup coconut milk
  • 3 tablespoons coconut oil, melted (I add this because I am obsessed with coconut oil but it is actually optional)

Directions:

  • Melt the chocolate (I always use the microwave to melt¬†it in¬†short intervals, stirring in between) then add coconut oil, if using.
  • Heat 1 1/2 cup milk on medium heat. While waiting for the milk to heat, add coconut milk to the melted chocolate and mix well.
  • Lower the heat and add the melted chocolate to the heated milk and mix using a small whisk.
  • Pour the hot chocolate in a cup and refrigerate¬†for a minimum of two hours.
  • Pour more coconut milk and enjoy!

Watermelon and raspberries are absolutely perfect together! Add lemons or limes and you get a super perfect combination!

Ingredients:

  • 2 1/2 or 3 cups of frozen watermelon cubes
  • A handful of frozen raspberries (more if you like)
  • juice of 1 and 1/2¬†lemon
  • 1/3 cup water (or more if needed)
  • 2 tablespoons of sugar or sweetener of choice

Directions:

  • Allow¬†the watermelon to thaw enough for your blender to handle. Blend all the ingredients together. Pour in a bowl or a cup and garnish with mint for that¬†refreshing scent.

Happiness: Cocoa Dusted Truffles!

It’s always dark chocolate bars or chips when I go to the supermarket. But one day I spotted these…

I was hesitant at first because I was not ready for disappointment. With about 6 ingredients and sugar not being the first one, I had to get a box.

Is it The Chocolate Lover’s Choice? Heck YES!

Although the sweetness is not perfect for me, these truffles are VERY rich and they melt instantly in the mouth. The bitterness of the cocoa powder is the best part!

Note: It’s better to share these and not keep them¬†near because you might eat the entire¬†box in one day!

Happiness: Baking During Final Exam Period

Ingredients: (12-14 small cookies)

  • 1/2 cup peanut butter (Earth Balance Creamy Coconut and Peanut¬†spread is awesome!)
  • A little less than 1/4 cup¬†sugar or sweetener of choice
  • 1/3 cup + 1 tablespoon almond meal/flour
  • 3/4 teaspoon vanilla flavoring
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/2 cup chocolate chips

Directions:

  • Preheat the oven to¬†180‚ĄÉ.
  • In a bowl, mix everything until fully combined.
  • Roll into balls and place on a greased pan.
  • Bake for 10-12 minutes. Let them cool for 10 minutes.

Struggle, Faith & Growth

My mind usually runs a mile a minute but recently it seems like the speed took a whole new level. Struggling with contradicted thoughts and questions that are just hard to avoid has become something usual for me.

What matters? What am I doing for others? What is the purpose of creation? What is real and what is not? This is just a small sample of the hundreds of questions that I keep asking myself.

What makes this more difficult is my tendency to push my people away not only because reaching out to people to “express” is not something that I am comfortable doing but also because I would always assume that they wouldn’t understand.

So I asked myself: would looking for practical solutions help?¬†Maybe I’ll find answers with time?

I took the practical approach and tried different things. I wouldn’t say it didn’t help because it did but still… I couldn’t get away from those¬†constant battles.

I was reaching out to God but maybe I was not sincere enough because it was only when I decided to hand it all to Him, that I found comfort and inner peace. It was only then that I realized I forgot that faith and patience are the things that I should be holding onto.

And with God’s help and guidance,¬†I reached a point where I decided to accept that this struggle is part of living.

I have come to realize that it is with struggle that we gather strength and grow. It is with struggle that we get to appreciate what we have become.

This might sound too simplistic yet is achievable if we only change the way we look at struggle.

and as it has been¬†said:¬†“The harder the conflict, the more glorious the triumph”
