That day when I thought “It’s time to make guilt-free peanut butter cups”. That day when I made one and I wanted to cry tears of happiness. I swear I was like oh my god, oh my god, did this come from heaven?!!
It is just unbelievable because making it is pretty simple and does not require much ingredients other than chocolate, peanut butter and a sweetener.
I like dark chocolate so I use one with 85% cocoa (always better to use chocolate with 60% cocoa and more).
If I don’t have peanut butter with no added sugar I just use Skippy, which is going to make this a semi-guilt-free treat but it doesn’t really matter because it tastes so awesome.
1. Line a muffin tray with cupcake liners.
2. Melt some chopped chocolate in the microwave. Make sure you stir after each 20-second interval. Add stevia or honey according to taste. I usually don’t measure ingredients because I adjust according to what I have.
3. Pour the chocolate into the cups. Freeze for about 10 minutes.
4. After taking the muffin tray out of the freezer, spread a spoonful of peanut butter over the chocolate cups.
I usually prefer a two-layer peanut butter cup to have a good chocolate-to-peanut butter ratio. If I wanted to make a top layer I would melt more chocolate and sweeten it, then pour it over the peanut butter and freeze for about 5 minutes.
It is better to keep the peanut butter cups at room temperature until they soften and then you can enjoy =)
P.S. I don’t really use a muffin tray because I don’t make more than five peanut butter cups usually. So I just make them in paper cups and place them in the freezer on a plate.
